We already had a bake sale promoting an organization in need and had an international movie played with international food. We are planning on having in international fashion show and a car wash.

You could try working with the Secondary Languagess department and get guest speakers from different backgrounds to talk about the diverse cultures of the world.
Teachers may jump at the idea because it is educational and you may be able to gain some student "buzz" because it wouldn't be the "same-old" boring class learning verb endings. Etc...
We have done this at my school (I being a teacher) and we even invited speakers who did not come from a culture whose language is taught at the school. (Example - We had a Korean language specialist come in even though that language is not taught)
Usually we couple this with a lunch-time "passport to the world" event where we have our exchange students/students from different ethic backgrounds have cusine avaiable from that culture in addition to some other interesting activities (Such as translating your name into that "diverse" backgrounds language).
